I mentioned these babies in yesterday’s post and now here is the recipe!
1 box Pillsbury Vanilla Cake Mix (or Funfetti Cake Mix)
1/3 cup applesauce
1/3 cup of egg whites (6 tbsp.)
1/4 cup of Holiday sprinkles, or the sprinkles of your choosing (Only if you are not using Funfetti mix)
Pre-heat oven to 375 degrees.
Unwrap at least 24 candies and set aside.
Mix (or beat) all the ingredients together.
Place spoonfuls of cake batter on a lightly greased cookies sheet. At least 2 inches apart.
Place one unwrapped peppermint candy firmly in the center of each cookie.
Bake 8-12 minutes, depending on oven. Or until golden brown and firm to the touch. (My cookies baked for just about 10 minutes)
Remove from oven and let cool.
Makes 24 cookies at 114 calories each.
If you don’t care for a peppermint in the center, you can make them with peppermint frosting.
All the same ingredients, minus the candies. You will need a container of frosting, Vanilla or Classic White seem to be the best. And Peppermint Extract that you can find near the spices in a grocery store.
Remove the lid and foil from frosting container, place in microwave for 20 seconds, remove and stir. Heat again for another 10 seconds, then add peppermint to taste and stir. I added 6 drops to the entire container of frosting for a light peppermint taste. If you don’t want the whole container to be peppermint flavored, I suggest spooning the frosting into a separate bowl, adding peppermint as needed.
Dip half the cookie into the frosting. Remove excess from bottom of cookie with spoon. Allow to cool and frosting will harden.
